Winter Butter Lettuce and Radiccio Salad

Ingredients

  • 1 head of butter lettuce washed and torn into bite-sized pieces
  • 1 small head of radicchio thinly sliced
  • 1 cup pomegranate seeds
  • 1/2 cup walnuts toasted and roughly chopped
  • 1 large apple thinly sliced
  • 1/2 cup crumbed goat cheese optional

Vinaigrette:

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together all the dressing and set aside.
  • To a large salad plate layer the butter lettuce, then raddicchio, apple, pomegranate seeds, and walnuts. If waiting to serve, squeeze some fresh lemon juice on the apple slices so they dont brown. 
  • Drizzle the vinaigrette over the salad ingredients. Gently toss the salad to coat the ingredients evenly with the vinaigrette. Enjoy!
