1head of butter lettucewashed and torn into bite-sized pieces
1small head of radicchiothinly sliced
1cuppomegranate seeds
1/2cupwalnutstoasted and roughly chopped
1large applethinly sliced
1/2cupcrumbed goat cheeseoptional
Vinaigrette:
1/4cupextra-virgin olive oil
3tablespoonsfresh lemon juice
1tablespoonhoney or maple syrup
1tablespoonDijon mustard
Salt and pepper to taste
Instructions
In a small bowl, whisk together all the dressing and set aside.
To a large salad plate layer the butter lettuce, then raddicchio, apple, pomegranate seeds, and walnuts. If waiting to serve, squeeze some fresh lemon juice on the apple slices so they dont brown.
Drizzle the vinaigrette over the salad ingredients. Gently toss the salad to coat the ingredients evenly with the vinaigrette. Enjoy!
