This simple and refreshing watermelon cucumber salad is the perfect salad for summer and made with just a handful of nutrient dense ingredients.

Ingredients

  • 4 cups cubed watermelon
  • 2 Persian cucumbers cut in half and thinly sliced
  • 1 cup vegan feta cheese diced
  • 1 ripe avocado diced
  • 2 tablespoons fresh mint leaves minced
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Sea salt to taste

Instructions

  • In a large mixing bowl, add all ingredients.
  • Gently toss everything together and garnish with fresh mint leaves.
  • Serve the chilled and enjoy!
