Preheat the oven to 375°F.
In a large mixing bowl, combine the ground beef, almond flour, dijon mustard, 2 tablespoons ketchup, coconut aminos, cooked onion, minced garlic, a beaten egg, salt, and black pepper. Mix the ingredients thoroughly with your hands to ensure everything is evenly distributed.
Place a tablespoon of the meat mixture into a saute pan over medium heat. Once the meat is cooked on both sides, taste test and add more seasoning as needed.
Transfer the meat mixture to a baking dish or shape it into a loaf on a greased parchment-lined baking sheet.
Pour about a 1/4 cup of ketucup on the top and spread with the back of a spoon of brush. Place the meatloaf in the oven and bake for approximately 45-50 minutes or until the internal temperature reaches 160°F.
Once cooked, let the meatloaf rest for 15-20 minutes before slicing.
