1 can navy beans, drained and rinsed

persian cucumbers, finely diced

yellow bell pepper, stem and seeds removed, finely diced

orange bell pepper, stem and seeds removed, finely diced

vine tomatoes, finely diced
1
ripe avocado, diced

scallions, thinly sliced

cup fresh cilantro, chopped

Juice of 1 lime

tablespoons red wine vinegar
1
clove garlic, minced
1
tablespoons olive oil
1
teaspoon honey (optional)

teaspoon salt, or to taste
Black pepper, to tastes
To serve: corn or grain free chips

Directions
In a large mixing bowl, combine the navy beans, cucumbers, bell peppers, tomatoes, avocado, scallions and cilantro.
In a small bowl, whisk together the lime juice, red wine vinegar, garlic, olive oil, honey, salt, and black pepper.
Pour the dressing over the bean and vegetable mixture. Gently toss until everything is well coated. Taste and adjust the seasoning.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve with veggies and chips!
