Ingredients

  • 15 oz 1 can navy beans, drained and rinsed
  • 3 persian cucumbers, finely diced
  • 1 yellow bell pepper, stem and seeds removed, finely diced
  • 1 orange bell pepper, stem and seeds removed,  finely diced
  • 2 vine tomatoes, finely diced
  • 1 ripe avocado, diced
  • 4 scallions, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 Juice of 1 lime
  • 1 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 tablespoons olive oil
  • 1 teaspoon honey (optional)
  • 1 teaspoon salt, or to taste
  • Black pepper, to tastes
  • To serve: corn or grain free chips

Instructions

  • Directions
    In a large mixing bowl, combine the navy beans, cucumbers, bell peppers, tomatoes, avocado, scallions and cilantro.
  • In a small bowl, whisk together the lime juice, red wine vinegar, garlic, olive oil, honey, salt, and black pepper.
  • Pour the dressing over the bean and vegetable mixture. Gently toss until everything is well coated. Taste and adjust the seasoning.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve with veggies and chips!
