Shaved Brussel Sprout Salad

Ingredients

  • 1 lb brussel sprouts trimmed or 10oz shaved raw brussel sprouts
  • 1 honeycrisp apple thinly sliced and then cut into matchsticks
  • 1/4 cup sliced almonds toasted
  • 1/2 cup freshly grated pecorino romano cheese optional

dressing:

  • 2 tablespoons white balsamic vinegar
  • 2 teaspoons honey
  • 1/4 cup olive oil
  • 2 teaspoons dijon mustard
  • salt + pepper

Instructions

  • Directions
    Make the dressing by adding all the ingredients to the bottom of a large bowl you will be making the salad in. Whisk together until combined.
  • Place the trimmed and cleaned brussel sprouts in a food processor with the slicing attachment or use a mandoline to shave the brussel sprouts super thin!
  • Add the shaved brussel sprouts, apples cut into matchsticks, sliced almond and grated cheese (if using) to the bowl with the dressing. Toss together with tongs until combined and top with more cheese, if desired. Enjoy!
