Ingredients

  • 4  tablespoons chia seeds
  • 1 14oz can coconut milk
  • 1 teaspoon pumpkin pie spie
  • 1/2 cup canned pumpkin
  • 4 tablespoons maple syrup
  • 4 scoops collagen powder, optional coconut yogurt, optional

Instructions

  • Directions
    In a medium bowl, combine all the ingredients and whisk together until no clumps.
  • Cover and let the mixture sit on the counter top for an hour.
  • After the pudding has set, stir and taste to adjust sweetness. 
  • Divide the Pumpkin Chia Pudding into serving bowls or glasses and top with additional pumpkin pie spice and a dollop of coconut yogurt, if desired. Enjoy!
