Dip the coated chicken into the beaten eggs, making sure to coat it completely.
Next add about 10 bites at a time to the ground sweet potato chips, pressing gently to adhere the chips to the chicken. Ensure each piece is evenly coated. Repeat for remaining chicken pieces.
Place the coated chicken bites on the baking sheet, leaving some space between each piece.
Lightly spray the tops of the chicken bites with cooking spray.
Bake in the preheated oven for 20 minutes, flipping the chicken bites halfway through the cooking time to ensure even browning.
Once the chicken bites are golden brown and cooked through, remove them from the oven. Serve with ranch, BBQ sauce or any dipping sauce you like!
