Paleo Glazed Cake Donuts

Ingredients

  • 4 eggs
  • 1/4 cup canned coconut milk
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • pinch of sea salt

Glaze:

  • 1/2 cup coconut butter or manna, melted for 30 sec in microwave
  • 2 tablespoons maple syrup
  • 2-4 tablespoons water

    Preheat oven to 350F and grease a donut pan. To a blender, add all the wet ingredients: eggs, coconut milk, maple syrup, coconut oil and vanilla extract. Blend on high until combined. Then add the rest of the ingredients and blend again until combined. Pour into greased donut pan and bake for 10-12 mins until toothpick comes out clean.
  • Whisk together the glaze ingredients until you get a maple syrup type consistency.
  • Let the donuts cool for 5 minutes in the pan and then place on a wire rack inside a sheet tray. Dip each donut into the glaze and back on the rack. Eat right away or place in the fridge to firm up. Enjoy!
