Mint Cumin Lamb Chops

Ingredients

  • 2 lbs lamb loin chops or rib chops
  • 1/2 yellow onion, roughly chopped
  • 1/2 cup fresh mint leaves
  • 2 teaspoon ground cumin
  • 2 cloves garlic, skin removed and smashed
  • 1 teaspoon sea salt
  • 3 tablespoons olive oil
  • flaky sea salt for finishing

Instructions

  • In a food processor, blend together the onion, mint, cumin, garlic, salt and olive oil.
  • Place the lamb in a shallow dish and pour the marinade on top. Using your hands make sure the marinade is coating all sides of the chops. Cover and let marinate for at least 2 hours in the fridge.
  • Preheat the grill or a cast iron grill plate to medium high heat.
  • Remove excess marinade from the chops, leaving a small amount of the marinade.
  • Carefully place them on the preheated grill and let cook for 3 mins per side without moving to create those beautiful grill marks.
  • Serve with sides or enjoy as an appetizer!
