In a food processor, blend together the onion, mint, cumin, garlic, salt and olive oil.
Place the lamb in a shallow dish and pour the marinade on top. Using your hands make sure the marinade is coating all sides of the chops. Cover and let marinate for at least 2 hours in the fridge.
Preheat the grill or a cast iron grill plate to medium high heat.
Remove excess marinade from the chops, leaving a small amount of the marinade.
Carefully place them on the preheated grill and let cook for 3 mins per side without moving to create those beautiful grill marks.
Serve with sides or enjoy as an appetizer!
