Mango Chia Pudding

This Mango Chia Pudding is so creamy and easy to make! It's only 5 ingredients and makes the perfect breakfast, snack or dessert!

Ingredients

  • 2 cups coconut milk
  • 6 tablespoons chia seeds
  • 2 teaspoons vanilla extract
  • 2 tablespoons maple syrup
  • 2 scoops collagen powder I like vital proteins
  • pinch of salt
  • 1 cup diced mango

Instructions

  • Place the coconut milk, chia seeds, vanilla, maple syrup, collagen and salt in a bowl. Whisk together until completely combined. Leave on the counter for about 45 minutes, stirring halfway through. You want the consistency to be thick and the seeds to absorb all the milk.
  • For individual servings, add 1/4 cup of mango to 4 containers. Using a muddler or a fork, mash the mango until a pureed consistency. Add 1/2 cup of chia pudding on top and top with more mango on top. Enjoy!
