Chop Salad with Honey Mustard Vinaigrette

Makes 2 servings

Ingredients

  • 1 head romaine lettuce thinly chopped
  • 1/3 cup Castelvetrano olives pitted and halved
  • 1 vine ripe tomato diced
  • 10 slices salami chopped
  • 1 cup rotisserie chicken diced
  • 1/2 english cucumber diced
  • 2 tablespoons dijon mustard
  • 2 tablespoon honey
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

  • In a large bowl, combine the chopped romaine lettuce, olives, tomatoes, salami, chicken, and cucumber.
  • In a separate small bowl, whisk together the dijon mustard, honey, mayonnaise, and apple cider vinegar and season to taste.
  • Drizzle half the vinaigrette over the chop salad and toss gently to coat all the ingredients. Add more dressing as needed.
  • Divide the salad into two serving bowls and enjoy!
