Chocolate Cashew Bark

Ingredients

  • 2 cups raw unsalted cashews
  • 1 cup dark chocolate chips, (I use sugar free lily's)
  • 1 tablespoon coconut oil
  • sea salt

Instructions

  • Directions
    Add the cashews to a sheet tray and place into a 375F oven for about 7 minutes until golden brown. Let cool.
  • Add the chocolate and the coconut oil to a medium glass bowl and microwave for 45 seconds. Stir until all chocolate chips are melted. 
  • Add the cooled roasted cashews to the chocolate and mix until cashews are covered in chocolate. Transfer cashews to a parchment paper lined sheet tray, sprinkle with sea salt and place into the freezer for at least 20 minutes. Break into pieces and enjoy!
  • Store in an airtight container, in the freezer for up to 3 months!
