Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds and then lay the wet rice paper wrapper on a clean wet surface. In the center of the wrapper, layer a small amount of shredded chicken, lettuce, cucumber, carrots, avocado slices, and cilantro.
Fold the bottom of the rice paper up around all the ingredients in the center and then each side of the wrapper towards the center. Tightly roll the center into a burrito.
Repeat the process with the remaining wrappers and ingredients.
