Chicken Summer Rolls with Peanut Sauce

Ingredients

  • 8 rice paper wrappers
  • 2 cups cooked chicken, shredded
  • 1 cup your favorite lettuce, thinly shredded
  • 1 cucumber, julienned
  • 1 cup carrots, julienned
  • 1 avocado, thinly sliced
  • 1/2 cup cilantro leaves

For the Peanut Sauce:

  • 1/2 cup peanut butter
  • 1 tablespoon coconut aminos or tamari
  • 1 1/2 tablespoons maple syrup
  • 2 teaspoons rice vinegar
  • 1 teaspoon ginger, grated
  • 2 tablespoons avocado oil
  • 1/2 tablespoons water, to thin out

    Prepare all the ingredients for the summer rolls - have the shredded chicken, lettuce, cucumber, carrots, avocado slices, and cilantro ready.
  • To make the peanut sauce, whisk everything together in a small bowl. Add water gradually until you achieve your desired consistency. Set aside.
  • Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds and then lay the wet rice paper wrapper on a clean wet surface. In the center of the wrapper, layer a small amount of shredded chicken, lettuce, cucumber, carrots, avocado slices, and cilantro.
  • Fold the bottom of the rice paper up around all the ingredients in the center and then each side of the wrapper towards the center. Tightly roll the center into a burrito.
  • Repeat the process with the remaining wrappers and ingredients.
  • Serve the chicken summer rolls with the dipping peanut sauce. Enjoy!
