Chicken Salad Lettuce Cups

Ingredients

  • 2 cups cooked chicken breasts or thighs rotiserrie chicken works great!, diced into small cubes
  • 2 stalks celery small dice
  • 2 tablespoons minced parsley
  • 1/4 cup red onion small dice
  • 1 small apple small dice
  • 1/3 cup avocado oil mayonnaise
  • salt/pepper
  • 1 head butter lettuce leaves removed from root

Instructions

  • In a large bowl, add all the ingredients except the lettuce. Stir together until evenly combined and taste to adjust seasoning. Serve in lettuce leaves or in a wrap!
