large ripe avocado, or 2 small, pit and skin removed, cut into 1/2 in cubes
1english or 4 persian cucumbers, cut in half and sliced about 1/4 in thick
2scallions, trimmed and thinly sliced
Toasted sesame seedsfor topping
Instructions
In a 8oz mason jar, add all the dressing ingredients. Add the lid on top and shake together.
In a large bowl, add the cucumber, avocado, scallions and the dressing on top. Gently stir together being careful not to mash the avocado. Top with sesame seeds and enjoy!
*this salad is better after sitting in the fridge for at least an hour!
