Avocado Cucumber Salad with Sesame Ginger Dressing

Ingredients

Dressing:

  • 3 tablespoons toasted sesame oil
  • 2 tablespoons rice vinegar
  • 2 teaspoons toasted sesame seeds
  • 1 tablespoon coconut aminos
  • 1 in fresh ginger, peeled and grated or minced
  • 1 tablespoon honey optional

Salad:

  • large ripe avocado, or 2 small, pit and skin removed, cut into 1/2 in cubes
  • 1 english or 4 persian cucumbers, cut in half and sliced about 1/4 in thick
  • 2 scallions, trimmed and thinly sliced
  • Toasted sesame seeds for topping

Instructions

  • In a 8oz mason jar, add all the dressing ingredients. Add the lid on top and shake together.
  • In a large bowl, add the cucumber, avocado, scallions and the dressing on top. Gently stir together being careful not to mash the avocado. Top with sesame seeds and enjoy!
  • *this salad is better after sitting in the fridge for at least an hour!
