Vegan Cookie Dough Bites

- 1 (15.5 oz) can garbanzo beans, drained and rinsed
- 7 Medjool dates, pitted
- 1/3 cup cashew butter
- 1/2 cup almond flour
- 1/2 tsp sea salt
- 1/2 cup dark chocolate chips (sugar-free options like Lily's)
Instructions
- DirectionsPlace the garbanzo beans, dates, cashew butter, and sea salt in a food processor. Blend until the ingredients are well combined and form a dough-like consistency, scraping down the sides of the processor as needed.
- once the dough is smooth, transfer to a mixing bowl and add the almond flour and chocolate chips. Stir until everything is evenly distributed.
- Using a tablespoon cookie scoop, scoop out bite-sized balls and place into a glass container or plate. Repeat the process until all the dough has been used.
- Refrigerate the balls for at least 30 mins and store in an airtight container for up to 7 days.
- Enjoy the cookie dough bites straight from the refrigerator whenever you're in the mood for a sweet treat!
