Ingredients
- 15 oz 1 can navy beans, drained and rinsed
- 3 persian cucumbers, finely diced
- 1 yellow bell pepper, stem and seeds removed, finely diced
- 1 orange bell pepper, stem and seeds removed, finely diced
- 2 vine tomatoes, finely diced
- 1 ripe avocado, diced
- 4 scallions, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 Juice of 1 lime
- 1 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 tablespoons olive oil
- 1 teaspoon honey (optional)
- 1 teaspoon salt, or to taste
- Black pepper, to tastes
- To serve: corn or grain free chips
Instructions
- DirectionsIn a large mixing bowl, combine the navy beans, cucumbers, bell peppers, tomatoes, avocado, scallions and cilantro.
- In a small bowl, whisk together the lime juice, red wine vinegar, garlic, olive oil, honey, salt, and black pepper.
- Pour the dressing over the bean and vegetable mixture. Gently toss until everything is well coated. Taste and adjust the seasoning.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve with veggies and chips!
