Raw Superfood Brownie Bites
Recipe Description: Makes about 20 brownie bites
Ingredients
- 1 cup walnuts and cashews (or any nuts you like!)
- 1/2 cup medjool dates, pitted
- 1/4 cup + 1 tablespoon creamy almond butter
- 1/3 cup raw cacao powder
- 3 tablespoons hemp seeds
- 1/4 teaspoon sea salt
for chocolate drizzle:
- 1/2 cup chocolate chips
- 1 tablespoon coconut oil
garnish: goji berries, dried cranberries, pumpkin seeds, pecans etc. + flakey sea salt
Instructions
- DirectionsIn a food processor, add the nuts and pulse until they are finely ground.
- Add the pitted Medjool dates, almond butter, raw cacao powder, hemp seeds, and sea salt to the food processor with the ground nuts. Process the mixture until it forms a sticky and uniform dough and holds together when you touch it with your fingers.
- Scoop out 1 tablespoon portions of the mixture and press each portion into a mini silicone muffin tray or into a parchment-lined brownie pan, creating a flat, even layer. Press down with your hands or the back of a measuring cup.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil for one minute. Stir together. Drizzle the melted chocolate over the raw brownie mixture and spread out evenly on top.
- Sprinkle any toppings you like on top. I used chopped dried cranberries, pumpkin seeds, and a touch of flakey sea salt on top of the chocolate.
- Place the tray in the fridge for at least an hour to allow the brownie bites to firm up.
- Once set, remove from the fridge and if using the brownie pan, pull out the brownies by lifting the parchment paper and cut into bite-sized pieces. If using a silicone muffin tray, pop out the bites. Store in the fridge and keep for up to 10 days in the fridge.
