This quinoa porridge is so warming and a delicious breakfast on a cold morning! With only 4 ingredients it’s also so easy to make!
Quinoa Porridge
Ingredients
- 1 cup quinoa, rinsed
- 1 1/2 cup canned coconut milk
- 1 1/2 cup unsweetened almond milk
- 1 tsp ground cinnamon
- 2 tbs maple syrup
- pinch sea salt
- 2 scoops collagen optional
Garnish:
- fresh fruit (berries, cherries, banana etc.)
- almonds, cashews, walnuts etc.
- nut butter
Instructions
- In a small saucepan, add the quinoa and one cup of each milk. Bring to a boil, then lower to a simmer and cover for 20 minutes.
- Remove the lid, stir in the cinnamon, maple syrup, salt and 1/2 cup of each milk. You want the quinoa to get mushy and resemble oatmeal. Add as much maple syrup and milk to your desired consistency and taste.
- Top with fresh fruit, granola, coconut, nuts etc. Makes 3-4 servings. Enjoy!
