Pumpkin Chia Pudding

Ingredients
- 4 tablespoons chia seeds
- 1 14oz can coconut milk
- 1 teaspoon pumpkin pie spie
- 1/2 cup canned pumpkin
- 4 tablespoons maple syrup
- 4 scoops collagen powder, optional coconut yogurt, optional
Instructions
- DirectionsIn a medium bowl, combine all the ingredients and whisk together until no clumps.
- Cover and let the mixture sit on the counter top for an hour.
- After the pudding has set, stir and taste to adjust sweetness.
- Divide the Pumpkin Chia Pudding into serving bowls or glasses and top with additional pumpkin pie spice and a dollop of coconut yogurt, if desired. Enjoy!
