This paleo meatloaf has so much flavor and is the perfect weeknight dinner! It's gluten free, grain free, dairy free but no one will be able to tell!
Ingredients
- 2 pounds 80/20 ground beef
- 1/2 cup almond flour
- 1 tablespoon Dijon mustard
- 2 tablespoons ketchup + 1/4 cup
- 2 tablespoons coconut aminos
- 1 medium onion finely chopped and cooked until translucent
- 3 cloves garlic minced or 1 teaspoon garlic powder
- 2 large egg beaten
- Salt and black pepper to taste
- minced parsley for garnish
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the ground beef, almond flour, dijon mustard, 2 tablespoons ketchup, coconut aminos, cooked onion, minced garlic, a beaten egg, salt, and black pepper. Mix the ingredients thoroughly with your hands to ensure everything is evenly distributed.
- Place a tablespoon of the meat mixture into a saute pan over medium heat. Once the meat is cooked on both sides, taste test and add more seasoning as needed.
- Transfer the meat mixture to a baking dish or shape it into a loaf on a greased parchment-lined baking sheet.
- Pour about a 1/4 cup of ketucup on the top and spread with the back of a spoon of brush. Place the meatloaf in the oven and bake for approximately 45-50 minutes or until the internal temperature reaches 160°F.
- Once cooked, let the meatloaf rest for 15-20 minutes before slicing.
