Mint Cumin Lamb Chops
Ingredients
- 2 lbs lamb loin chops or rib chops
- 1/2 yellow onion, roughly chopped
- 1/2 cup fresh mint leaves
- 2 teaspoon ground cumin
- 2 cloves garlic, skin removed and smashed
- 1 teaspoon sea salt
- 3 tablespoons olive oil
- flaky sea salt for finishing
Instructions
- In a food processor, blend together the onion, mint, cumin, garlic, salt and olive oil.
- Place the lamb in a shallow dish and pour the marinade on top. Using your hands make sure the marinade is coating all sides of the chops. Cover and let marinate for at least 2 hours in the fridge.
- Preheat the grill or a cast iron grill plate to medium high heat.
- Remove excess marinade from the chops, leaving a small amount of the marinade.
- Carefully place them on the preheated grill and let cook for 3 mins per side without moving to create those beautiful grill marks.
- Serve with sides or enjoy as an appetizer!
