Meal Prep BBQ Chicken Salads
Makes 4 salads
Ingredients
- 2 boneless skinless chicken breasts, cooked and diced (or use a rotisserie chicken)
- 1/4 cup BBQ Sauce
- 1 15oz can black beans, drained and rinsed
- 1 cup cherry tomatoes halved
- 1 cup shredded carrots
- 4 cups sliced romaine
- 3 scallions sliced
- 1/2 cup cilantro leaves
- 1/2 cup grain free chips or any corn chips crushed
dressing:
- 1/2 cup barbecue sauce
- 1/2 cup avocado oil mayonnaise
- 2-3 tablespoons water adjust for desired consistency
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- Salt and black pepper to taste
Instructions
- DirectionsIn a small bowl, mix together all the dressing ingredients and taste to adjust seasoning.
- In another small bowl, add the cubed chicken with about 1/4 cup of barbecue sauce until the chicken is well coated.
- In each mason jar, layer the ingredients in the following order:
- – Bottom layer: 1/4 cup dressing
- – Next layer: 1/2 cup barbecue chicken
- – Followed by layers of black beans, cherry tomatoes, carrots, romaine, scallions, cilantro and crushed chips. Seal the mason jars and refrigerate until ready to eat. (They last about 4-5 days in the fridge)
- When ready to eat, pour into a bowl, mix everything around and enjoy!
