Grain Free Superfood Granola
Recipe Description:
Ingredients
- 1 cup raw walnuts, roughly chopped
- 1/2 cups raw pecans, roughly chopped
- 1/2 cup sliced almonds
- 1 cup unsweetened desiccated coconut
- 1 cup raw pumpkin seeds
- 1 cup cup raw sunflower seeds
- 1/4 cup hemp seeds
- 2 tbsp flax seed
- 1/2 tsp ground cinnamon
- 1/2 tsp sea salt
- 1/4 cup unrefined coconut oil, melted
- 1/4 cup maple syrup
- 2 tbsp coconut sugar (optional)
- 1 tsp vanilla extract
- 1/4 tsp pure almond extract
Instructions
- DirectionsPreheat oven to 325F and line a baking sheet with parchment paper.
- In a large bowl, add all the dry ingredients and stir to combine. In a small bowl, combine the wet ingredients thoroughly. Place the wet mixture into the dry and toss together until completely combined. Pour the mixture onto the prepared baking sheet, spreading out evenly and pressing down with the flat side of a measuring cup.
- Place in the oven, on the middle rack for 20-25 minutes. It will get golden brown and start to smell amazing! Remove from the oven and let cool completely. Then break apart into desired sizes and transfer to air-tight container.
- Use the granola as a topping for smoothies, yogurt and acai bowls with berries and nut butter or however you'd like! Enjoy!
- Stays good for 7 days in the fridge or up to 3 months in the freezer.
