Chop Salad with Honey Mustard Vinaigrette
Makes 2 servings
Ingredients
- 1 head romaine lettuce thinly chopped
- 1/3 cup Castelvetrano olives pitted and halved
- 1 vine ripe tomato diced
- 10 slices salami chopped
- 1 cup rotisserie chicken diced
- 1/2 english cucumber diced
- 2 tablespoons dijon mustard
- 2 tablespoon honey
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste

- In a large bowl, combine the chopped romaine lettuce, olives, tomatoes, salami, chicken, and cucumber.
- In a separate small bowl, whisk together the dijon mustard, honey, mayonnaise, and apple cider vinegar and season to taste.
- Drizzle half the vinaigrette over the chop salad and toss gently to coat all the ingredients. Add more dressing as needed.
- Divide the salad into two serving bowls and enjoy!
