Meal Prep Asian Chicken Salad
This asian chicken salad in a mason har is perfect for meal prep and keeps your salads crunchy and fresh for days!
Ingredients
- 1 cup sliced persian cucumbers about 2
- 1 red bell pepper thinly sliced
- 1 cup snap peas sliced
- 1 cup shredded carrots
- 2 cups shredded red cabbage
- 2 cups shredded chicken
- 1 cup mandarin orange segments
- 3 cups chopped romaine
- 1/2 cup cilantro roughly chopped
- 3 scallions thinly sliced
- 1/3 cup cashews, roughly chopped
Dressing
- 1/4 cup rice wine vinegar
- 3 tablespoons avocado oil
- 3 tablespoons toasted sesame oil
- 1 tablespoon coconut aminos
- 1/4 cup mayo
- 2 tablespoons cashew butter
- 1 tablespoon honey
- 1 clove garlic minced
- 1 in ginger minced
Instructions
- Add all the dressing ingredients to a medium bowl and whisk together until smooth. Set aside.
- To (4) 32oz mason jars, add 1/4 cup of the dressing to each and then add the cucumber, bell pepper, snap peas, carrots, red cabbage, chicken, orange segments, romaine, cilantro, scallions and cashews to the mason jars in that order, putting an even amount of each ingredient in each jar. Place the lid on top and place into the fridge for 4-5 days.
- When ready to eat, remove the lid and empty jar into a bowl. Mix together and enjoy!
