Mediterranean Lamb Kefta Pitas
Ingredients
meat
- 1 lb ground lamb
- 1 lb 80/20 ground beef
- 1/3 cup chopped parsley
- 1/3 cup chopped cilantro
- 2 tablespoons chopped fresh mint
- 1 tablespoon paprika
- 2 teaspoons ground cumin
- 1 tablespoon sea salt
- 1/2 medium yellow onion, grated
- 2 cloves garlic, minced or grated
- 10 wooden or metal skewers
fix-ins:
- homemade hummus
- store bought garlic sauce
- parsley leaves
- sliced persian cucumber
- sliced tomato
- pita or almond flour tortillas I like the siete brand
Instructions
- Preheat the outdoor grill or indoor grill plate over medium heat. Clean and oil grill!
- If using wooden skewers, soak them in a shallow dish of water while preparing the meat.
- In a medium bowl, combine all the meat ingredients and mix together with your hands until everything is evenly distributed.
- Coat your hands in olive oil and grab a handful of meat and press it around the middle of a skewer, then roll it lightly between your palms to form an even “sausage” around the skewer. Dont add too much meat otherwise it will be too heavy and fall off the skewer. Repeat with remaining skewers and meat.
- Grill the meat skewers for about 4 minutes on one side and 4 minutes on the other until char marks form and the meat is firm and cooked through.
- Once the meat is done, add the pita or tortillas to the grill to quickly warm on both side.
- To plate, add the hummus and garlic sauce on the tortilla, top with one skewer of meat (removed from the skewer), cucumber, tomato, and fresh parsley leaves. Drizzle with olive oil, sea salt and sumac. Enjoy!
