Gluten Free Breakfast Pizza
This easy breakfast pizza is made with just a few simple ingredients and perfect for a crowd!
Ingredients
- 4 tbsp tablespoons olive oil split
- 1/2 yellow onion thinly sliced
- 4 sliced bacon
- 1/2 bunch broccolini cut into 1/2 in pieces
- 1 pre made gluten free crust I like Capellos grain free frozen crust
- 1 cup shredded mozzarella cheese optional
- 4 eggs
- sea salt and freshly cracked black pepper
For garnish
- 6 fresh chives chopped
- flakey sea salt
Instructions
- Preheat your oven to 425°F (220°C).
- In a skillet, heat a tablespoon of olive oil over medium-low heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 20 minutes. Set aside.
- Next, add the bacon to the same pan and cook for about 3 3-4 mins per side until golden brown. Set aside on a paper towel lines plate. Once cooled, slice the bacon in 1/4 in stripes.
- Next, add the diced broccolini to the pan with the bacon fat. Cook for just 1 minute stirring often. Remove from the pan and set aside.
- Place parchment paper on a baking sheet and add the pre made pizza crust on top.
- Add two tablespoons of olive to the pizza crust and use a brush to spread out evenly on top.
- Spread the caramelized onions evenly over the crust. Sprinkle the shredded mozzarella, if using, over the onions. Scatter the diced bacon over the cheese. Arrange the cooked broccolini on top of the cheese and bacon. Create 4 wells in the toppings and crack an egg into each well. Season with salt and pepper.
- Place the sheet tray in the middle rack in the oven and bake for 15-20 minutes or until the crust is golden brown, the cheese is melted and bubbly, and the eggs are cooked to your desired doneness. Once the pizza is done baking, remove it from the oven and let it cool slightly.
- Garnish with chopped chives, flakey salt and pepper.
- Slice the pizza into wedges or squares and serve immediately. Enjoy!
